A kitchen practice that treats recipes like craft

We distill heritage technique into monthly workshops and a subscription of recipes and studio notes — slow, exacting, and quietly ambitious.

We began as a small bench where a cook and a designer kept notes. Over seasons we documented processes — blanching, curing, and reduction — until those notes became the structure for a learning subscription. Our work privileges clarity: precise steps, ingredient provenance, and repeatable technique for cooks who care about the how.

Before — scattered notes

Recipes stored as fragments, reliant on memory and intuition. Home cooks struggled to reproduce results consistently.

After — reproducible craft

Structured method sheets, annotated timings, and annotated photos make technique repeatable. Membership converts learning into habit.

Our story

We started as an experimental bench in 2016: one cook, a small vegetable garden, and an urge to write every step down. Early recipes were tests — a single sauce refined across months. Growth taught restraint: remove distraction, highlight process. By 2020 we framed the work into guided workshops and a monthly subscription of techniques. Each issue focuses on a single process, taught through annotated steps and short studio films. The approach is editorial: fewer topics, more depth, a craft-first lens.

The refinement phase made the offering usable by both studio chefs and motivated home cooks. We keep the language sparse, the notes practical, and the tempo deliberate — a quiet guide for serious making.
